Gastronomic enthusiasts take notice. The world’s most expensive set menu is set to debut on Ibiza’s trendy Playa d’en Bossa strip this June, ushering culinary and sensory adventure into an exciting new era – all for just US $2,000 a head.
A meal at SubliMotion, which is overseen by Michelin-starred Spanish chef Paco Roncero, has been dubbed a “gastro-sensory” experience and promises to appeal to more than just the taste buds. Accommodating 12 fine diners at a time on its communal table, the restaurant’s interior is a living canvas.
Controlled by an operator who monitors the guest experience, everything from the walls to the table change as the meal progresses – emitting a variety of complex patterns ranging from fluttering butterflies to twisting forests. The philosophy behind this experience is based entirely on chef Roncero’s desire to create avant-garde gastronomy, a theatre for the senses.
“The micro environments depend on the cook, who is the ‘emitter,’” explains one of Roncero’s sous chefs in the video above.
“The ‘receiver’ is the diner, the dish is the ‘message,’ and the setting is the ‘channel.’ All of this is inside the ‘micro-environment,’ which is the place where you eat.”
Guests willing to pay the US $2,000 cover charge will enjoy a 20-course meal in the restaurant’s unique environment, located in the soon-to-open Hard Rock Hotel Ibiza. Specific dishes are yet to be announced.
Roncero earned two Michelin-stars for his restaurant La Terazza del Casino in Madrid. He currently runs four restaurants around the world, which are generally known for their innovative, avant-garde gastronomic creations.
