Ushering in a new era of culinary expertise at Napasai, A Belmond Hotel, Koh Samui, Mauricio Reyes Corti is taking the reins at the property’s Beach Restaurant and Lai Thai Restaurant. Having garnered more than 20 years’ experience in the kitchen with the likes of Michelin-starred venues Borgo Santo Pietro, Amelia Restaurant, and Faustino Gran Relais & Chateaux Hotel, the new executive chef’s philosophy will see a special emphasis placed on simple-yet-sophisticated dishes, using ingredients from the local terroir.

The Uruguayan-Italian veteran chef has wasted no time in imparting his knowledge on the property’s kitchens with the introduction of a new menu at Beach Restaurant. Gourmands can delve into signature plates including octopus anticuchos accompanied by sweet potato chips and an aromatic coriander-tomato dressing, and grilled sea bass with ‘beer-naise’, and roasted kale and tomato salad, before rounding off the experience with a decadent coco puff tiramisu.
