There’s nothing that we love more than a completely unique gastro-experience and this month, Niyama Private Islands Maldives is satisfying our cravings with the world’s first underwater Nikkei dining experience, Subsix. Plunged six metres below the cerulean surface, a wall of glass showcasing sun-dappled corals, a rainbow of anemone, butterfly fish and the occasional reef shark, greets guests as they enter the restaurant.

The new tasting menu, curated by Executive Chef Thierry Vergnault, takes gourmands on a journey through Japanese tradition and precision alongside Peruvian boldness and artistry. Spotlighting produce from the surrounding Indian Ocean, highlights include scallop ceviche, wahoo tartare and buttery cod with crispy asparagus. Complementing the five-course feast is a curated selection of sakes and fine wines chosen by Head Sommelier Mayank Sharma. Priced at US $250 per person, the five-course Nikkei tasting menu is available daily from midday to 2.30pm.
