Sonas Collection has opened the doors to 1635, Scotland’s newest fine dining destination at the renovated Knipoch House Hotel near Oban, almost 100 miles north of Glasgow. The restaurant offers a seven-course Scottish dining experience, prepped with locally sourced ingredients. Chef Engledow, formerly of Duisdale House Hotel in Skye, is offering a Taste of Scotland menu that features Shetland scallops, Argyll venison, Orkney halibut, and Tain cheddar. The restaurant’s name is a hat tip to the hotel’s 17th-century origins, while Knipoch is a Viking reference, meaning ‘hilly place’ in Norse.
