Vying to break the mixology mold, Laurel Bar at Caesars Palace Bluewaters Dubai has introduced 'Ecosystems of Gaia' – a new experimental menu of 10 cocktails that draws inspiration from the different ecosystems of ‘Gaia’, the Ancient Greek word for earth.
Blending artisanal liquor and ingredients such as salted coconut and oyster leaves for ‘Ocean’ and homemade wild berry wine with balsamic bitter for ‘Rainforest’, each concoction represents a different side of Gaia, which Greek mythology called ‘the ancestral mother of all life’.
